Almond Cookies (w/Chocolate Chips)

I got this recipe from All Recipes with some variations... These were made at about 11pm last night after a glass or two of white wine with frozen mangoes my girlfriend brought over. The inspiration for this was from my lack of fruit and abundance of several-month-old almonds. I love the crunchiness and adding chocolate chips never hurts!

1/4 c coconut oil

1/4 c sugar

1 egg

1/2 c all purpose flour

1/4 c almonds

Dash of cinnamon

1 TBSP Vanilla Extract

1/2 c Chocolate Chips (optional)

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Ground almonds by chopping them in half then pulsing in food processor until they become mostly powder.
  3. In large bowl, cream together the coconut oil and sugar. Beat in the egg, vanilla extract, cinnamon and almonds. Gradually mix in the flour until well blended. Fold in chocolate chips (optional). Drop by teaspoonfuls 2 inches apart on ungreased cookie sheets. (Although I sprayed a light coat of PAM on mine)
  4. Bake 8 minutes in the preheated oven, or until cookies are lightly colored.
